What is Sprengidagur?

A holiday dedicated to eating yourself into oblivion. Welcome to Sprengidagurinn, the Tuesday before Lent, which translates to “Bursting Day.” And no, it’s not about fireworks or volcanic eruptions (although, in Iceland, that’s always a possibility); it’s about stuffing your face until you’re on the verge of an explosion.

Think of it as Iceland’s version of Fat Tuesday—except instead of beignets or pancakes, you’re diving headfirst into a salty, brothy, meat-fueled extravaganza. The dish of the day? Saltkjöt og baunir, or salted lamb and split pea soup.

The History Behind Sprengidagurinn

Sprengidagurinn has deep roots in Icelandic tradition, tracing back to the country’s Christian past and medieval dietary customs. The holiday marks the last day of indulgence before the fasting period of Lent, much like Shrove Tuesday or Mardi Gras in other cultures. Historically, Icelanders—who endured long, harsh winters—took this opportunity to consume a hearty, protein-rich meal that would sustain them before the more austere diet of Lent took effect. The dish was born out of necessity; salted meat was a staple in a time when refrigeration was nonexistent, and dried peas provided much-needed sustenance.
